flow rate on this valve is listed at 120 litres per minute -- is that enough for most machine tool setups or is it cutting it close?

For the majority of machine tool applications, 120 litres per minute is solid. Most standard machine tool circuits run well within that range, so you're not likely to be pushing the ceiling in everyday use. Where it could get tight is if you're running a high-demand multi-actuator system with simultaneous movements pulling heavy flow at the same time. For typical single or dual-function machine tool work though, that flow capacity handles it without issue.
