Will this work for a standard hydraulic setup, or does it need special fluids?

Buna-N seals mean it's compatible with standard hydraulic fluids. You shouldn't need anything special.

Flow rate on this one's listed at 120 litres per minute, is that enough for most machine tool setups, or are we talking about something that'd only work for lighter-duty applications?

For the majority of machine tool applications, 120 litres per minute is a solid working capacity. That figure puts it well within range for a wide cross-section of industrial hydraulic circuits, not just light-duty work. Where you'd start pushing limits is in high-volume systems running multiple actuators simultaneously at peak demand. For single-axis or moderately loaded machine tool setups, this valve handles the flow without issue.
