Got a refuse hauler that keeps blowing off pressure at the wrong point. would the RV3-10 K 8T 18 hold steady at higher settings or is 350 bar about the ceiling for this thing?

350 bar (5,000 psi) is the rated maximum for this valve, so that is the ceiling you are working with. For a refuse hauler application it is actually a solid fit since the RV3-10 series is specifically called out for that kind of mobile work. The poppet-style design gives you consistent pressure control rather than the erratic bleedoff you might see with a worn or undersized valve. As long as your target relief pressure falls within that 5,000 psi range, this should hold where you set it.
