Will this handle the pressure on my harvester? It's gotta be tough enough to keep up.

What's the max pressure this RV3 valve can handle, and is 5000 psi actually the ceiling or just a recommended operating point?

5000 psi is the rated maximum, so that's the hard ceiling for this valve, not a soft recommendation. It's listed at 350 bar, which works out to right around 5000 psi. Running it at or near that limit continuously is a different conversation than hitting it in peak demand situations, but as far as what the valve is built to handle, that's the number.
