Got a harvester that needs a valve to shut off flow when power cuts out, this setup do that by default?

That's what the normally closed configuration handles. When the solenoid loses power, the valve defaults to the closed position and blocks flow. So if your machine loses electrical signal for any reason, flow stops automatically. That makes it a solid fit for harvest equipment where you want isolation at rest without relying on an active signal to hold things closed.
