Got a harvester throwing fits with its old solenoid valve and need to know if this one'll hold up at 5000 psi. That accurate for this valve?

Rated to 350 bar, which works out to 5000 psi, so yes, that pressure rating is correct. For harvester applications this valve is actually a solid fit since it's built from hardened and ground steel, which holds up better than softer materials under repeated pressure cycling.
