Running this on a refuse hauler setup, does it handle 5000 psi without issue?

5000 psi is right at the rated maximum pressure for this valve. It's built from hardened and ground steel, so it holds up under that kind of load without wearing down fast. Plenty of refuse hauler operators run equipment at or near that ceiling, and this valve was spec'd with exactly those kinds of applications in mind.
