Flow rate on this one shows 30 liters per minute, but the specs also mention 265 L/min max. Which number actually matters for sizing this valve to my system?

Both numbers serve a different purpose. The 30 liters per minute is the rated flow for that valve position under normal operating conditions. The 265 L/min figure, which works out to about 70 US GPM, is the maximum flow the valve can handle before you start pushing it past its design limits. For sizing purposes, your system's working flow should stay at or below the 30 L/min rating for reliable directional control. The higher number tells you the ceiling, not the target.

If I'm usin' this on a harvester, will that 30 liter per minute flow rate hold up?

That 30 liter per minute flow rate is the standard, but it can handle peaks up to 265 liters per minute if needed. So, it should work well for the harvester application.
