This valve rated for 350 bar across the board, or is that just a peak number it can handle for short bursts?

350 bar (5,000 psi) is the rated pressure for this valve, and that figure applies to the CBV1-10V-C-0-A-50/ as a whole. Flow capacity tops out at 550 L/min (143 USgpm), though the rated flow for normal operation is 60 litres per minute. So you've got solid headroom for high-pressure circuits, but the 60 L/min rated flow is what you'd want to plan your system around for steady-state operation.
