valve's rated for 350 bar and 550 L/min on the high end, but what's the actual working flow rate on this thing?

Rated capacity and working flow are two different animals here. The 550 L/min and 350 bar figures represent the pressure and flow limits the valve can handle. The actual operating flow rate this valve is built around is 60 liters per minute. That's your working number for sizing and system design purposes.
