flow rate on this one shows 227 liters per minute but the max listed is 350 L/min, what's the deal with that?

Running at 227 liters per minute is the set flow rate for this particular configuration. The 350 L/min figure is the maximum the valve series is built to handle, so there's headroom above the operating point.
