flow rate on this one is listed at 100 liters per minute -- is that the max it'll handle or is there some headroom above that before things go sideways?

100 liters per minute is the rated maximum for this valve. Running it right at the top of its flow rating for extended periods isn't something you'd want to do in most setups.
