flow rate on this one shows 600 liters per minute -- is that enough for most mid-size hydraulic systems or is it more suited for bigger setups?

For mid-size systems, 600 liters per minute is actually on the higher end of what you'd typically need. Most mid-range hydraulic circuits run well below that threshold, so this valve gives you solid headroom without restricting flow.
