Will this Vickers valve work alright with regular hydraulic fluid, or do I need to get somethin' special?

Buna-N seals make this valve compatible with standard hydraulic fluids and give it some resistance to moisture, so you shouldn't need anything special.

flow rate on this one says 300 litres per minute -- is that enough for medium duty industrial setups or is it more of a high-end system part?

For most medium-to-high flow hydraulic systems, 300 litres per minute puts this valve well within a useful working range. It's not a light-duty component by any stretch. Industrial applications that need reliable pressure limiting without constantly pushing the ceiling of the valve's capacity tend to be a good fit here.
