We run a die casting operation and been looking at pilot-operated directional valves in this size range. This one rated for up to 700 litres a minute, is that the max flow, or is there some headroom built in?

700 litres per minute is the rated maximum flow for this valve. That figure represents the upper limit of what it's spec'd to handle, not a conservative estimate with extra margin built in. For a die casting setup, that capacity puts it in a solid range for high-flow circuit work, and die casting is actually one of the listed application types for this valve. Just make sure your system stays within that ceiling under peak demand conditions.
