flow rate on this thing says 700 liters per minute -- is that enough to run a press or primary metal application without choking out?

For press and primary metal work, 700 liters per minute is a serious amount of flow capacity. Most heavy industrial presses and metal processing systems operate well within that range, so you shouldn't run into any restriction issues on the valve side.
