flow rate on this thing is listed at 600 liters per minute, that enough to keep up with a high-demand hydraulic circuit without choking out?

For high-capacity systems, 600 liters per minute is a solid ceiling. That puts it well above what most mid-range industrial circuits push through on a continuous basis, so you shouldn't run into a flow restriction issue under normal operating loads. Just make sure your circuit is sized to take advantage of that capacity and you're not bottlenecked somewhere upstream or downstream of the valve.
