We run these EPV16s on harvesters and refuse haulers both, what's the actual flow this valve handles day to day versus that peak rated number?

Rated flow tops out at 160 liters per minute, which works out to about 42 US gallons per minute. The continuous operating flow rate is 100 liters per minute. So the 160 figure is the ceiling, not what you'd plan your system around for steady-state work. Size your circuit to that 100 L/min number and you'll be in good shape for the kind of duty those applications put on a valve.
