flow rate on this valve is listed at 120 litres per minute -- is that enough for press and die casting setups or is it usually on the lower end for those applications?

For press and die casting work, 120 litres per minute puts this valve solidly in a usable range for a wide variety of circuits. Those applications can vary a lot depending on cylinder bore, stroke speed, and system demand, but this flow capacity covers most mid-range industrial setups in those categories. If your system is running particularly high-volume cycles, you'd want to verify your peak flow demand against that number, but for standard press and die casting hydraulic circuits, it holds up well.

Can this handle hydraulic fluid with some moisture in it, or do I need to be real careful about that?

It's made to resist moisture, and it uses Buna-N seals, which hold up well when there's some fluid incompatibility.
