flow rate on this one shows just under 56 liters a minute, is that about right for power steering setups, or is that more on the industrial side of things?

For power steering use, that flow rate is on the higher end, which actually makes it well suited for larger or more demanding steering systems. The V2010 series covers both power steering and light industrial work like small presses and compact hydraulic units, so that 55.84 liter per minute rating gives it enough capacity to handle either without being undersized. If your application falls into one of those two categories, the flow is appropriate.
