Does the male JIC end on this fitting follow the SAE J514 spec? Got a system that's real particular about that.

Yes, the 7/8-14 male JIC end meets SAE J514 and uses the standard 37-degree flare seat, so it'll play nice with other J514-compliant components on that side of the connection.

trying to swap out an old adapter, is this one the straight steel 10 bore to 10MJ with the 7/8-14 JIC flare?
