what kind of hydraulic fluid does this motor call for, and is there a viscosity range i need to stay inside of?

Premium anti-wear hydraulic fluid is what you want running through it. Viscosity should stay between 100 and 200 SUS under normal operating conditions, and you never want to drop below 70 SUS at operating temperature. Push it thinner than that and you're going to accelerate wear in a hurry.
