Can this handle the constant start and stop in a metal cutting setup without wearing out too fast?

pump's got an adjustable max displacement stop on it -- does that mean I can dial back the output without swapping anything out, or is that more of a set-it-and-forget-it deal during installation?

That stop is meant to be set to your max allowable displacement and left there as a mechanical limit, not really a dynamic on-the-fly control. It keeps the pump from exceeding a set output, which is handy when you're matching the pump to a circuit that can't handle full displacement. You won't need to pull the unit or swap components to make that adjustment, but it's generally configured during setup rather than used as routine operational tuning.
