what's the finish on this nut, and is it gonna hold up in a wet or outdoor environment?

Carbon steel with a zinc clear trivalent chromate finish, plus Dura-Kote plating on top of that. That combination gives it solid corrosion resistance, better than what you'd get off a standard uncoated fitting. For wet or exposed conditions, that plating is doing real work keeping rust from taking hold.
