pressure rating on this fitting -- is 5,000 PSI enough for most hydraulic line work or is that on the lower end?

For the bulk of standard hydraulic applications, 5,000 PSI dynamic pressure handles the load just fine. Most industrial and mobile hydraulic systems run well under that ceiling, so unless you're working with something high-cycle or extreme-pressure, this fitting sits comfortably in range for everyday line work.
