what size hose does this fitting work with, and is that a -16 dash size?

-16 is correct. That puts you at a 1-inch hose ID, which is standard for that dash size in hydraulic hose assemblies. The fitting is built for crimp-style hose ends, so you'll need the appropriate crimper and dies matched to that hose size when putting the assembly together.
