Will this motor hold up okay if it gets splashed with water and maybe some mild chemicals every now and then?

The epoxy paint should definitely give it some extra protection against moisture and light chemical exposure.

what's the difference between the standard, wheel, and bearingless setups on this motor? trying to figure out which one fits my application before I order

Each configuration is built for a different mounting and load situation. The standard setup works for typical shaft-driven applications. The wheel configuration is meant for direct wheel drive, so the motor mounts directly to the wheel hub. Bearingless versions are used when the motor will rely on external bearings in the machine's own housing, which keeps things compact and lets the host equipment handle the radial and axial loads. Which one you need comes down to how your equipment is designed to mount and support the motor.
