Will this fitting hold up to some vibration, or do I need to use something with a higher pressure rating?

Designed for general-purpose, low to medium pressure hydraulic applications, it's best to check the specific pressure requirements of your system to ensure compatibility, especially if you anticipate shock hazards. H277 or H435 hoses are recommended where shock hazards exist.

fitting's made of carbon steel right? does it have any kind of coating on it or is it bare metal going into whatever environment i throw it at?

Carbon steel is the base material, and it comes with Dura-Kote plating already applied. That coating is there specifically to fight corrosion, so you're not working with bare metal. For general-purpose low and medium pressure hydraulic work, that combination holds up well over time and helps extend the life of the hose assembly it's connected to.
