Is this fitting made from actual 316 stainless or just stainless-coated?

Straight 316 stainless steel all the way through. That grade holds up well in wet, chemical, or corrosive environments where regular carbon steel fittings would rust out quick. For a lot of industrial setups that's exactly why folks spec 316 over the cheaper alternatives.

got a tight spot on a hydraulic line. is this one of those 90 degree fittings with a -8 JIC on it?

For tight routing, this is a 90 degree hose fitting with a #8 FJIC connection. The bend helps you turn the line without forcing a big radius right at the connection.
