does this adapter go from NPTF on one end to a 37 degree flare on the other, or am I reading that wrong?

You're reading it right. One end is NPTF male at 3/8 inch, and the other end is SAE 37 degree flare male. It's a straight configuration, so there's no angle or offset to account for during installation. Pretty common setup when you're connecting pipe thread to a flare fitting in the same line.
