This Eaton Aeroquip adapter is suitable for a range of applications, including use in marine, military, chemical processing, pulp and paper, and food and beverage processing environments, as well as for off-shore drilling. The carbon steel DANFOSS / EATON ADAPTER 3/8 MALE PIPE 8 MALE JIC features Dura-Kote plating for enhanced corrosion resistance.

This 90° elbow adapter offers design flexibility and provides higher operating pressures above SAE standards. It has a 3/8" male NPTF end and a 3/4" male SAE 37° end.

does this adapter work for connecting 3/8 pipe thread to a JIC fitting, or do i need something else in between?

That's exactly what it's built for. One end is 3/8 NPTF male pipe thread, the other is a 3/4-16 SAE 37 degree male JIC flare, and the 90 degree elbow configuration handles direction changes right at the connection point. No additional adapters needed if those are the two thread types you're working with.

trying to swap out an elbow fitting i’ve got now, is this one a 90 with 3/8 nptf on one end and a #8 jic 37 degree on the other?

You are looking at an NPTF male to SAE 37 degree male 90 degree elbow adapter. End 1 is 3/8 inch NPTF male (0.375), and end 2 is size 8 SAE 37 degree flare male (0.75).
