fitting's rated to 6,000 PSI dynamic -- that hold up alright for continuous hydraulic line use or is that more of a peak number?

6,000 PSI is the maximum dynamic pressure rating, so it accounts for the pressurized flow conditions you'd see in an active hydraulic system, not just static load. For most standard hydraulic circuits running well under that ceiling, this fitting will hold up without issue. Just make sure your line and the components on both ends are rated to match.

got a hose end that’s #8 JIC, will this screw right on and then go into 3/8-18 pipe thread on the other side?

You are looking at a straight stainless adapter with a #8 male JIC 37 degree flare on one end and a #6 male NPTF on the other. The thread callouts listed are 3/4-16 for the JIC side (SAE J514) and 3/8-18 for the NPTF side (SAE J476).
