pump says it's field reversible - does that mean I can swap rotation direction right on the job without pulling anything apart or ordering extra parts?

Rotation direction can be changed in the field without additional components, so if a machine's hydraulic connections runs opposite to what you expected, you're not stuck waiting on parts or sending it back.
