got a hydraulic line running 3,000 PSI on a piece of ag equipment -- will this tee hold up at that pressure or am I pushin it?

3,000 PSI is exactly the rated maximum dynamic pressure for this fitting, so you're right at the ceiling. It'll handle that load, but you wouldn't want to run it above that figure on a regular basis. The forged steel construction gives it solid durability for high-pressure work, and the SAE J514 spec on the JIC ends backs up its suitability for that kind of hydraulic service.
