got a #10 jic setup already, is this tee all the same size on every leg?

pressure rating on this tee, is 5,000 psi the max or is that a continuous working pressure?

5,000 psi is the maximum dynamic pressure rating for this fitting. That's the ceiling for pressure spikes and working conditions, not a burst figure. For steady-state hydraulic lines running close to that number, you're within spec. If your system regularly surpasses that in surge conditions, you'd want to account for that before installation.
