Running this on a harvester that sees a lot of pressure spikes. Does the 5000 psi rating hold up in actual working conditions or is that more of a peak number?

350 bar, which works out to 5000 psi, is the rated operating pressure for this valve. That figure is backed by hardened and ground steel construction, so it's not just a burst rating they slapped on the spec sheet.
