fitting says 2 inch hose dash size but also lists 2 1/2 - 12 compatible hose ID, which one do i go by when matching to my existing hose?

The -32 dash size refers to the hose end itself, which corresponds to a 2 inch nominal bore. The 2 1/2 - 12 designation describes the JIC thread size on the swivel end, not the hose bore. When matching to your existing hose, go by the dash size. If your current hose assembly runs -32, this fitting is the right one to crimp onto it.
