For a tight, straight connection, it’s a close nipple style adapter with NPTF male threads on both ends, and both ends are 1/8 inch.

Is this thing gonna hold up if I use it for hydraulics, or is it more for lower-pressure stuff like grease?

It's rated for hydraulic systems, but it's also suitable for grease, refrigeration, and instrumentation. It can handle fuel, LP, and natural gas, too, but you'd need to place a special order for those.

both ends on this are NPTF male threads, right? just wanna make sure before i order a handful of em for a grease system rework

Correct on both counts. Each end is 1/8 inch NPTF male, so it threads directly into female NPTF ports on both sides. For grease system applications that's one of the listed uses, so you're in good shape there.
