Will this Eaton adapter work for hydraulic systems, or is it just for gas and stuff?

This Eaton brass adapter is definitely suitable for hydraulic systems, as well as grease, refrigeration, and instrumentation applications. It can handle fuel, LP, and natural gas too, but those are on special order.

got a 3/4 pipe run and need a straight connector, is this the one thats male on both ends?

For a straight pipe-to-pipe hookup, it’s an NPTF male to NPTF male long nipple adapter with 0.75 inch ends on both sides.

both ends on this are NPTF male right? trying to figure out if it'll work as a nipple between two female ports on a hydraulic block

Correct on both counts. Each end is 3/4 NPTF male, so if your block has two female NPTF ports at 3/4 inch, this nipple will thread straight into both sides. NPTF threads are pressure-tight by design, which makes them a solid choice for hydraulic connections without relying solely on a sealant to hold pressure.
