Reckon this’d be a good fit for a dump truck application?

Being made of cast iron, and given its flow rate, this Vickers V10 pump can definitely be used in dump trucks. It's also used in metal cutting, plastic injection molding, wheel loaders, and oil and gas service applications.

pump puts out around 56 liters a minute -- is that enough flow for plastic injection molding equipment or is it on the low end for that kind of work?

For a good chunk of injection molding setups, 56.2 litres per minute is a solid working flow rate. The V10 series covers a wide range of displacements, so if your particular machine needs more or less volume, there are other configurations available within the same platform. What makes this pump a reasonable fit for molding applications beyond the flow number is the pressure-balanced 12-vane design, which keeps flow pulsation low. Smooth, consistent flow matters in injection molding because pressure spikes can affect cycle quality and put extra stress on tooling.
