got a tight spot to snake hose through, how sharp can this 100R7 twin line bend without kinking it

For tight routing, the minimum bend radius called out for this twin hose is 2.5 inches. Keeping your bends at or above that radius helps it flex the way it was built to without stressing the hose.

these hoses rated for chemical transfer work? got some fluid lines that see a mix of hydraulic oil and some light chemical exposure and wondering if the nylon tube and polyurethane cover can hold up to that

Nylon tube construction paired with a polyurethane cover gives these hoses solid resistance to oil absorption and most common fluids, which is exactly why chemical transfer is listed as one of their intended applications. The cover is specifically built to prevent absorption of most oils and fluids, so general chemical exposure in a mixed-fluid environment lines up well with what these hoses are made for. That said, "most" fluids is the honest answer here, not all, so anything highly aggressive or specialty chemical should be evaluated against nylon and polyurethane compatibility before committing.
