been running a trencher for a while and my motor's shot, does this 4000 series unit put out enough torque to hold up under that kind of load?

At 600 newton metres of torque, this motor is well within range for trencher applications. Eaton Char-Lynn actually lists trenching as one of the intended uses for the 4000 Series, so you're not stretching it. One thing worth doing before you load it hard is the recommended break-in: run it at about 30% of rated pressure for roughly an hour before putting it to full load. Skipping that step tends to shorten motor life faster than most people expect.

got a 4 bolt SAE B mount on my rig, will this motor bolt up and what ports/shaft does it come with?

It uses a 4 Bolt SAE B mounting flange, has 1-1/16-12 UN-2B SAE O-ring ports with staggered porting, and the output is a 1-1/4 inch straight keyed shaft.
