valve's rated up to 90 L/min but I see 550 L/min mentioned too -- which number actually applies to my setup?

Those two numbers cover different things. The 90 litres per minute rating is specific to this valve, the 1CE90N27S3, and reflects its individual flow capacity. The 550 L/min figure is a series-wide maximum across the full 1CE90 lineup, not a rating for this particular unit. So when you're sizing this for your system, 90 L/min is the number to work with.

So this thing handles up to 90 liters a minute, but what's the max pressure it can take? Just wanna make sure I'm not gonna blow it.

This pilot-assisted relief valve with check is rated up to 350 bar, which is about 5,000 psi. Just keep your system pressure at or below that level, and you should be good to go.
