what's the pressure this valve comes set at from the factory, and what's the max it can handle if I need to adjust it up later?

Comes preset at 1200 PSI straight out of the box. The valve itself is rated up to 5000 PSI (350 bar), so there's a fair amount of headroom if your system ends up needing a higher setting down the road.
