trying to swap out a 90 with a 45, what exactly are the ends on this fitting?

On the fitting end, it has a 0.75 inch female JIC 37 connection. The other side is intended to tie into a line, hose, or tube, and the body is a 45 degree elbow.

fitting's made of carbon steel, does it hold up decent in wet or real grimy environments?

Dura-Kote plating covers the exterior, and that coating is specifically there to fight corrosion. Carbon steel on its own wouldn't be the first choice in constantly wet or chemical-heavy conditions, but with that plating in place this fitting is built to hold up under the kind of harsh, dirty environments you'd run into in heavy industrial work. It's not a stainless piece, but the corrosion protection is a real feature, not just a label.
