got a cord that measures right around 3/8 inch, will this strain relief actually clamp down on it?

Cable fit is based on diameter, and this strain relief style is meant for cable in the 0.315 to 0.394 inch range, with a listed maximum of 0.41 inch. A 3/8 inch cable is 0.375 inch, so it lands inside the specified range.

does this connector work with cables on the thicker end, like close to 0.4 inch diameter? got some heavier gauge wiring on a valve bank and need something that'll clamp down proper

Cable diameters from 0.315 to 0.394 inches fall within the rated range for this connector, so heavier cables in that window should seat and seal correctly with the strain relief. Just keep in mind the maximum cable diameter for the broader 5000 Series is 0.41 inches, so anything pushing past that would be outside what the strain relief is built to handle.

what's the temp range on this connector if I'm running it somewhere that gets real cold in the winter and hot as all get out in the summer?

With the standard nitrile gasket it'll handle anywhere from -13°F up to 194°F. If your environment pushes past those limits in either direction, there's an optional silicone gasket that stretches the range down to -40°F and up to 257°F. So even in pretty extreme conditions, you've got a path forward without swapping out the whole connector.
