does this plug work if the system's already got pressure in it, or do you have to bleed it down first?

You can connect it while the system is still pressurized, up to 500 psi. That connect-against-pressure capability is built into the 5100 series design, so there's no need to depressurize the line before making the connection. That saves real time on the job when you're working with live systems.
