seal material on this one, is it buna-n or do I need to spec something different for standard hydraulic fluid?

Buna-N is the standard seal on this coupling, and it holds up well with most conventional hydraulic fluids. For typical petroleum-based hydraulic oil, you're in good shape right out of the box. The product line does also come in EPR and Viton options if your fluid ever calls for something different, but for everyday hydraulic fluid transfer, the Buna-N seal is what most folks are running without any issues.

Does this coupling need thread sealant when you're threading it into a female pipe port, or is it good to go as-is?

No sealant is required on the NPT end. The 3/8-18 female pipe thread is the connection point on the back end, and the fitting is ready to install without tape or compound. Just make sure the mating port is clean and in good shape before you torque it in.
