what's this adapter made out of, and is it gonna hold up if there's moisture around it?

Brass construction with a Dura-Kote plating on it, so corrosion resistance is pretty solid. That coating is specifically there to handle environments where rust and oxidation would otherwise be a problem. For general moisture exposure in a hydraulic setup, it should hold up well.
