Can this handle hydraulic fluid with some moisture in it, or do I need to be extra careful about water?

Buna-N seals provide some moisture resistance, so it's more forgiving than some other options. However, it's still best practice to keep your hydraulic fluid as clean and dry as possible to maximize the life of your system.
